Banana PuddingBuy Book

Ingredients:

1 Box. (11-oz.) Vanilla Wafers
4 Lg. Bananas, peeled and sliced
2 Boxes (3.4 oz.) Banana or Vanilla Pudding and Pie Filling (not instant)
3 1/2 Cups of Milk
Cool Whip, thawed
Chopped Pecans (for garnishing)

Directions:

In a 13x9 dish, add a layer of vanilla wafers, followed by a layer of sliced bananas. Repeat layers, ending with a layer of vanilla wafers on top. In a medium saucepan, over high heat, add milk and bring almost to a boil, then stir in the banana or vanilla pudding and pie filling; reduce heat to medium and using a whisk (can use large spoon), whisk constantly until the mixture starts to thicken. Remove from the heat and pour over the vanilla wafer and banana mixture. let set at room temperature until cooled. Cover and refrigerate 2-3 hours before serving. When ready to serve, spread cool whip over the top and garnish with pecans, if desired. So good!

 

Note: For an extra special treat, add a layer of drained crushed pineapple and shredded coconut over top the vanilla and banana layers before pouring on the pudding mixture. I do that sometimes for special occasions or holiday’s.
